This easy frittata recipe offers a simple, quick and delicious protein-rich meal when you're pushed for time or ingredients.
We all have days when we simply don't feel like cooking a full meal. Perhaps it's been a tough day which has left us mentally drained, perhaps we've run short of time or even we simply forgot to buy the ingredients we need for our planned meal - it happens to the most organised of us, even with a shopping list.
What could be better than eggs, one of the best protein sources there is?
What's great with this easy frittata recipe is that, as long as you have the eggs, the other ingredients are largely negotiable, depending what you have in the fridge. It's also great for using up leftover ingredients that might not last until they're next needed.
You'll also notice that I haven't specified much in the way of ingredient amounts because it really is a case of "whatever is handy".
Easy Frittata Recipe
Ingredients
4 Eggs
Cheese - grated
Knob of Butter
Salt and Pepper
Your choice of toppings (cherry tomatoes, sweet peppers, olives, mushrooms, capers, sausage, chicken breast - whatever is in the fridge).
Method
Break the eggs into a bowl, add a pinch of salt and whisk.
At tis point, you can add most of your ingredients to the egg mixture or wait and arrange them on top once the egg is in the pan.
Melt the butter in a large frying pan or skillet.
Add the egg mix and toppings.
Sprinkle cheese over the top.
Cook until the eggs start to firm up, then place the pan under a hot grill to cook the top of the egg, the toppings and melt the cheese.
[If you have a pan with plastic handles that shouldn't be anywhere near the grill, you can simply flip the frittata over. Success rate in keeping the frittata whole varies, but the taste is the same.]
Once you're happy with the result, slide the frittata onto a plate, add a little freshly ground black pepper and serve.
