Beef “Bolognese” Recipe

Introduction

I've been making this delicious beef bolognese recipe since long before adopting a low carb and keto lifestyle.

As with all my recipes, it works just as well if eaten with regular pasta, some sort of spiralised vegetables or (my choice) by itself.

The key to getting a rich, tasty sauce is to make sure you cook it long enough to reduce the liquid to about half volume.

Beef "Bolognese" Recipe


Serves 2 Adults and 2 Children

Ingredients

500g Beef Mince (Ground Beef)

1 Large Onion - chopped

2 cloves of Garlic

2 medium Carrots - grated

Dried Basil, Salt and Pepper to taste

2 Tbsp Tomato Paste

400g tin of Chopped Tomatoes

2 Bell Peppers (I like green and red) - chopped

25g Butter or Ghee

400ml Chicken Stock

Method

Melt the butter in a large saucepan over a medium heat until it bubbles (don't let it burn).

Add the onions, carrots, tomato paste, basil and garlic. Cook until the onions are soft.

Add the beef mince and cook until thoroughly browned.

Add the chopped tomatoes.

Add the peppers and cook for 1 minute.

Add the mushrooms, stir in and cook for a further minute.

Add the chicken stock and simmer, stirring occasionally until reduced to about half the liquid volume.

Serve with pasta, spiralised vegetables or cauliflower rice, with a sprinkling of your favourite cheese.
