This simple guacamole recipe is quick and easy to make.
It works very well as an accompaniment to chilli (my turkey chilli), fajitas and any other Mexican-type dish you care to cook.
What's really good with this guacamole recipe is that it's fairly easy to adjust the quantities of ingredients to suit your personal taste and it will still work.

Serves 2 Adults and 2 Children (Easily)
1 Large Ripe Avocado
Small bunch of Coriander
1 Small Onion - roughly cut
1 Large Tomato - roughly cut
2 Cloves of Garlic - peeled
3 Tbs Extra Virgin Olive Oil (more or less to taste)
2 Tbs Lime Juice (more or less to taste)
1 tsp Salt (more or less to taste)
1/2 tsp Black Pepper (more or less to taste)
Peel the avocado, remove the stone and cut into chunks. Place the avocado and all the other ingredients in a mini blender.
Blend until it reaches your desired consistency.
Spoon into a bowl and serve as an accompaniment for your favourite Mexican-style dish.
